Nant Bourbon Cask – Australian Single Malt
Traditional pot still distillation methods combined with smaller barrels and the choice of timbers contribute significantly to Nant’s quality and flavour profile. What makes Nant distillery truly unique is the combination of pristine natural environment and pure natural ingredients.
A sharp & peppery aroma balanced with light honey & vanilla the taste to follow is filled with dark fruits & malted oats. Vanilla notes from the bourbon cask are evident, warm and creamy. To finish, touches of liquorice & maple syrup.
Lark Tasmanian Single Malt – Classic Cask
Handcrafter in the Coal River Valley, double distilled in locally crafted copper-pot stills and aged in carefully selected small casks, the Classic Cask features the citrus and butterscotch of the Lark house style with a hint of Tasmanian peat.
An aroma of golden syrup and vanilla with hints of oranges and grapefruit. Plum pudding, Christmas cake, cinnamon sticks, nutmeg and a wisp of Tasmanian peat smoke. On the palate sweet vanilla transforms into a heady combination of orange peel, butterscotch, cloves, nutmeg and grapefruit. To finish, more butterscotch and citrus notes with a satisfying smoky length.
Starwood Wine Cask Whiskey
A fruity, double distilled single malt made with Australian barley and craft brewers’ yeast for extra flavour. Lightly charred or steamed barrels sourced from Australian wineries making great shiraz, cabernets and pinot noirs. Often filled fresh when the barrel is still wet with wine. Matured in Melbourne’s wildly varied climate for three years.
Aromas of soft oak spice and orchard fruits. On the palate red berries, vanilla, caramel and more spice through with an exceptionally long finish thanks to the red wine barrels.
Starwood Solaro Cask Australian Whiskey
A twice distilled single malt whisky. We ferment Australian malted barley with brewers’ yeast for an extra flavourful craft finish. Solera is fully matured in carefully selected Apera casks, an Australian fortified wine that’s similar to a Sherry. The traditional way we blend Solera means there’s a drop of our original cask in every bottle.
Aromas of caramel, burnt sugar and spice with a jammy fruit palate, notes of crème brulee and a lingering, dry spiced finish
Bakery Hill Double wood
Single barrel and small batched, this whiskey is matured in American oak and finished in French oak. Unique in the whisky world, Bakery Hill handcraft each of their whiskies from single or double cask to produce malt of outstanding character, consistency and detail.
The nose opens with the slightest hint of apricot, coconut and plum, going on to reveal an intermingling of golden syrup and plum pudding warmed by the spicy hint of cloves. Subdued taste with orange marmalade overtones with the characteristic rich nougat sweetness and well-balanced oak. The finish is rounded and lingering to the very end.
Bakery Hill Peated Malt Whiskey Australian
To create this whiskey the barley has been malted over the finest Australian peat. Matured in American oak using a single cask.
A rich subdued peat aroma combined with a natural leathery earthiness with overtones of kumquat and fruit mince tart. Sweet but not sickly. The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palette emanding just one more sip. An astonishingly long and complex finish with an exotic mix of experiences.
